This Sunday evening we’ll have a lunar eclipse which will give us a blood moon. This inspired my husband to create this weekend cocktail for us.
The main flavoring and color in this cocktail comes from Pimm’s Blackberry and Elderflower. Oh, this stuff could be addicting. I already knew I loved elderflower liquor, but the addition of blackberry is so good. The lemon juice in the cocktail is just the right sharpness against the liquor.
Like a Pimm’s Cup this drink is light and refreshing which is perfect because it is also unusually warm for fall this weekend. Three and a half ounces may seem like a lot of alcohol for a cocktail, but the Pimm’s is only 40 proof.
The thing that really makes this cocktail live up to its namesake is the use of a large round ice cube. It looks like a full moon floating in the drink. We use one of these ice cube molds and the ice lasts through two drinks.
The Blood Moon
Ingredients:
- 3 oz Pimm’s Blackberry and Elderflower
- 1/2 oz Hendrick’s Gin (though any gin will do)
- 1 t simple syrup
- 2 t lemon juice
- soda water
Put ice in a highball. Add all ingredients. Stir and serve.
